Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. wheat germ
  • 3 medium ripe bananas, mashed (1 c.)
  • 1/4 c. buttermilk
  • 1/4 c. oil
  • 4 egg whites
  • 1/2 c. nuts
  • 1/2 c. raisins

Method

  • Sift together the flour, sugar, baking soda, baking powder and salt; mix in wheat germ.
  • Add remaining ingredients; beat until well blended.
  • Place in an oiled 8 x 4-inch pan.
  • Bake at 350° for about 1 hour, or until done.
  • Yields 1 loaf, 16 slices.
  • Each slice contains 130 calories.
