Ingredients
- 1 1/2 c. all-purpose flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. wheat germ
- 3 medium ripe bananas, mashed (1 c.)
- 1/4 c. buttermilk
- 1/4 c. oil
- 4 egg whites
- 1/2 c. nuts
- 1/2 c. raisins
Method
- Sift together the flour, sugar, baking soda, baking powder and salt; mix in wheat germ.
- Add remaining ingredients; beat until well blended.
- Place in an oiled 8 x 4-inch pan.
- Bake at 350° for about 1 hour, or until done.
- Yields 1 loaf, 16 slices.
- Each slice contains 130 calories.
