- 7 tbsp olive oil margarine
- 3/4 cup firmly packed brown sugar
- 2 None large eggs
- 1 None large ripe banana, mashed
- 1/3 cup buttermilk
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 3/4 cup plus 5 tsp oat bran
- 8 oz frozen raspberries (about 1 cup)
Method
- Preheat oven to 350°F. Grease an 8 1/2-by-4 1/2-inch loaf pan with cooking spray and line base and two long sides with one piece of parchment.
- Cream margarine and sugar in a bowl with electric mixer until fluffy. Add eggs, one at a time, beating between additions. Stir in banana and buttermilk. Sift together flour and baking soda. Fold into banana mixture with oat bran until just combined. Fold in frozen raspberries.
- Spoon mixture into the pan and smooth surface. Bake for about 55 mins or until cooked when tested with a skewer. Let cool in pan for 5 mins before turning onto a wire rack to cool completely.
