Ingredients

  • 7 tbsp olive oil margarine
  • 3/4 cup firmly packed brown sugar
  • 2 None large eggs
  • 1 None large ripe banana, mashed
  • 1/3 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 cup plus 5 tsp oat bran
  • 8 oz frozen raspberries (about 1 cup)

Method

  • Preheat oven to 350°F. Grease an 8 1/2-by-4 1/2-inch loaf pan with cooking spray and line base and two long sides with one piece of parchment.
  • Cream margarine and sugar in a bowl with electric mixer until fluffy. Add eggs, one at a time, beating between additions. Stir in banana and buttermilk. Sift together flour and baking soda. Fold into banana mixture with oat bran until just combined. Fold in frozen raspberries.
  • Spoon mixture into the pan and smooth surface. Bake for about 55 mins or until cooked when tested with a skewer. Let cool in pan for 5 mins before turning onto a wire rack to cool completely.
