- 1 cup walnut halves, chopped
- 13 cup olive oil
- 2 garlic cloves, crushed
- 1 small red chili pepper, deseeded & finely chopped
- 500 g button mushrooms, trimmed
- 2 teaspoons brown sugar
- 1 tablespoon balsamic vinegar
- 2 tablespoons lime juice
- 1 tablespoon parsley, finely choped
- steamed jasmine rice (optional)
Method
- Heat a wok or frypan over high heat.
- Add the walnuts & cook, stirring.
- constantly, for 2-3 minutes or until hot.

- Add the oil, garlic & chilli to the wok & stir-fry for 30 seconds.

- the mushrooms & stir-fry for 2-3 minutes or until the mushrooms.

- Combine the balsamic vinegar & brown sugar together & add to the mushrooms, stir-fry 30 seconds or until well coated.
- Remove wok from the heat, stir in the walnuts & lime juice.
- Garnish with parsley.
- Serve with on its own or with steamed jasmine rice.
