Ingredients

  • 1 cup walnut halves, chopped
  • 13 cup olive oil
  • 2 garlic cloves, crushed
  • 1 small red chili pepper, deseeded & finely chopped
  • 500 g button mushrooms, trimmed
  • 2 teaspoons brown sugar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon parsley, finely choped
  • steamed jasmine rice (optional)

Method

  • Heat a wok or frypan over high heat.
  • Add the walnuts & cook, stirring.
  • constantly, for 2-3 minutes or until hot.
  • Remove & set aside.
  • Add the oil, garlic & chilli to the wok & stir-fry for 30 seconds.
  • Add.
  • the mushrooms & stir-fry for 2-3 minutes or until the mushrooms.
  • are just tender.
  • Combine the balsamic vinegar & brown sugar together & add to the mushrooms, stir-fry 30 seconds or until well coated.
  • Remove wok from the heat, stir in the walnuts & lime juice.
  • Garnish with parsley.
  • Serve with on its own or with steamed jasmine rice.
