Ingredients

  • 4 whole chicken breasts, halved and boned
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 (16 oz.) can sauerkraut, drained (press out juice)
  • 4 slices (about 4 x 6-inch) natural Swiss cheese
  • 1/4 c. bottled Thousand Island salad dressing
  • 1 Tbsp. chopped fresh parsley

Method

  • Place chicken in greased baking dish.
  • Sprinkle with salt and pepper.
  • Place sauerkraut over chicken.
  • Top with Swiss cheese. Pour dressing evenly over cheese.
  • Cover with foil and bake at 325° for about 1 1/2 hours or until fork can be inserted easily. Sprinkle with parsley.
  • Serves 4.
