Ingredients

  • 1 roasting chicken or 2 whole or disjointed
  • 1/4 lb. butter
  • 1/4 c. oil
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. oregano
  • 2 lemons (juice only)
  • 3 c. boiling water
  • 2 Tbsp. flour or cornstarch

Method

  • Wash chicken.
  • Heat butter and oil together.
  • Pour half of it into a shallow baking pan.
  • Spread to cover bottom.
  • Lay chicken in pan.
  • Sprinkle with salt, pepper and oregano.
  • Mix remaining butter mixture with lemon juice.
  • Baste chicken.
  • Bake 1 1/2 hours at 375°, basting at 3 or 4 times during baking.
  • Add boiling water to drippings in pan; mix.
  • Dilute flour or cornstarch in 1/2 cup cold water and stir into pan.
  • Bake 5 minutes at 475°.
  • Serve separately as sauce for mashed potatoes or rice pilaf.
  • May boil potatoes or rice and bake with chicken for 1/2 hour.
