Ingredients
- 1 roasting chicken or 2 whole or disjointed
- 1/4 lb. butter
- 1/4 c. oil
- 2 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. oregano
- 2 lemons (juice only)
- 3 c. boiling water
- 2 Tbsp. flour or cornstarch
Method
- Wash chicken.
- Heat butter and oil together.
- Pour half of it into a shallow baking pan.
- Spread to cover bottom.
- Lay chicken in pan.
- Sprinkle with salt, pepper and oregano.
- Mix remaining butter mixture with lemon juice.
- Baste chicken.
- Bake 1 1/2 hours at 375°, basting at 3 or 4 times during baking.
- Add boiling water to drippings in pan; mix.
- Dilute flour or cornstarch in 1/2 cup cold water and stir into pan.
- Bake 5 minutes at 475°.
- Serve separately as sauce for mashed potatoes or rice pilaf.
- May boil potatoes or rice and bake with chicken for 1/2 hour.
