- 2 (12 ounce) bags cranberries, fresh or frozen
- 1 12 cups brown sugar, packed
Method
- Preheat oven to 350 degrees F.
- Pick over the cranberries and place in a baking dish a little larger than the volume of berries (I use a 8 or 9 inch square glass dish).
- Like a cookie sheet with foil and place the baking dish on it (in case it overflows in the oven).
- Sprinkle the brown sugar over the berries.
- Place the cookie sheet and baking dish in the oven.
- Bake for 1 to 1 1/2 hours, stirring every 15 minutes.
- You want to cook long enough to soften the berries and have the juices boiling.
- Once the berries are soft, mash them well during the stirring every 15 minutes.
- This ensures that the cranberry sauce will set up once cooled.
- Remove from the oven, let cool slightly in the baking dish, then transfer to a storage dish and refrigerate.
