Ingredients

  • 2 (12 ounce) bags cranberries, fresh or frozen
  • 1 12 cups brown sugar, packed

Method

  • Preheat oven to 350 degrees F.
  • Pick over the cranberries and place in a baking dish a little larger than the volume of berries (I use a 8 or 9 inch square glass dish).
  • Like a cookie sheet with foil and place the baking dish on it (in case it overflows in the oven).
  • Sprinkle the brown sugar over the berries.
  • Place the cookie sheet and baking dish in the oven.
  • Bake for 1 to 1 1/2 hours, stirring every 15 minutes.
  • You want to cook long enough to soften the berries and have the juices boiling.
  • Once the berries are soft, mash them well during the stirring every 15 minutes.
  • This ensures that the cranberry sauce will set up once cooled.
  • Remove from the oven, let cool slightly in the baking dish, then transfer to a storage dish and refrigerate.
