Ingredients

  • 1 x 2-1/2lb broiler-fryer chicken
  • 2 Tbsp. Margarine or possibly butter
  • 2 Tbsp. Olive or possibly vegetable oil
  • 1/4 c. Finely minced onion
  • 1/4 c. Lemon juice
  • 2 Tbsp. Worcestershire sauce
  • 1/2 tsp Dry basil leaves
  • 1/4 tsp Dry marjoram
  • 1/4 tsp Dry oregano
  • 2 lrg Cloves garlic, finely minced

Method

  • Cut chicken into pcs; cut each breast half into halves and remove skin.
  • Heat margarine and oil in rectangular pan 13x9x2 inches in 375 oven till margarine is melted.
  • Stir in remaining ingredients except chicken.
  • Place chicken, meaty side down, in pan, turning to coat with herb mix.
  • Cook uncovered 30 min.
  • Turn chicken; cook till thickest pcs are done, about 30 min longer.
