Ingredients
- 8 ounce Chick peas
- 4 x Tomatoes
- 2 x Onions
- 1 x Green pepper
- 2 x Cloves garlic
- 1/2 tsp Marjoram
- 1 pch Sage
- 1 Tbsp. Minced parsley Salt pepper Light spray oil
Method
- Soak chick peas over-night or possibly in boiling water for one hour.
- Boil them gently till just tender, or possibly cook under pressure for about 20 min.
- Skin and quarter the tomatoes, peel and chop the onions and pepper and crush the garlic.
- Spray oil into pan and fry all the vegetables in it.
- Add in the herbs and finally the cooked, liquid removed chick peas.
- Season and cook in an oven proof dish, covered at 325F, gas 3 for an hour.
