Ingredients

  • 8 ounce Chick peas
  • 4 x Tomatoes
  • 2 x Onions
  • 1 x Green pepper
  • 2 x Cloves garlic
  • 1/2 tsp Marjoram
  • 1 pch Sage
  • 1 Tbsp. Minced parsley Salt pepper Light spray oil

Method

  • Soak chick peas over-night or possibly in boiling water for one hour.
  • Boil them gently till just tender, or possibly cook under pressure for about 20 min.
  • Skin and quarter the tomatoes, peel and chop the onions and pepper and crush the garlic.
  • Spray oil into pan and fry all the vegetables in it.
  • Add in the herbs and finally the cooked, liquid removed chick peas.
  • Season and cook in an oven proof dish, covered at 325F, gas 3 for an hour.
