Ingredients

  • 4 1/4 to 4 3/4 c. all-purpose flour
  • 1 pkg. active dry yeast
  • 1 1/2 c. warm water
  • 1/4 c. sugar
  • 1 tsp. salt
  • 6 c. boiling water
  • 1 Tbsp. sugar

Method

  • Combine 2 cups flour and yeast.
  • Add warm water, 3 tablespoons sugar and 1 teaspoon salt.
  • Beat at low speed with an electric mixer for 30 seconds.
  • Beat at high speed for 3 minutes.
  • Stir in as much of remaining flour as you can.
  • Turn out onto a floured surface; knead in enough flour to make dough stiff, elastic and smooth (6 to 8 minutes).
  • Cover; let rest for 10 minutes.
  • Divide dough into 12 portions.
  • Shape each portion into a ball; punch hole in the center and shape into a bagel.
  • Place on a greased baking sheet.
  • Cover; let rise for 20 minutes.
  • Broil bagels 3 to 4 minutes, turning once.
  • Drop bagels, 4 to 5 at a time into boiling water-sugar mixture.
  • Let simmer 7 minutes.
  • Drain on paper towels.
  • Place drained bagels on a well-greased baking sheet.
  • Bake in a 375° oven for 25 to 30 minutes, or until tops are golden brown.
  • Makes 12 servings.
