Ingredients
- 4 1/4 to 4 3/4 c. all-purpose flour
- 1 pkg. active dry yeast
- 1 1/2 c. warm water
- 1/4 c. sugar
- 1 tsp. salt
- 6 c. boiling water
- 1 Tbsp. sugar
Method
- Combine 2 cups flour and yeast.
- Add warm water, 3 tablespoons sugar and 1 teaspoon salt.
- Beat at low speed with an electric mixer for 30 seconds.
- Beat at high speed for 3 minutes.
- Stir in as much of remaining flour as you can.
- Turn out onto a floured surface; knead in enough flour to make dough stiff, elastic and smooth (6 to 8 minutes).
- Cover; let rest for 10 minutes.
- Divide dough into 12 portions.
- Shape each portion into a ball; punch hole in the center and shape into a bagel.
- Place on a greased baking sheet.
- Cover; let rise for 20 minutes.
- Broil bagels 3 to 4 minutes, turning once.
- Drop bagels, 4 to 5 at a time into boiling water-sugar mixture.
- Let simmer 7 minutes.
- Drain on paper towels.
- Place drained bagels on a well-greased baking sheet.
- Bake in a 375° oven for 25 to 30 minutes, or until tops are golden brown.
- Makes 12 servings.
