Ingredients

  • 4 c. flour (4 to 5)
  • 1 pkt yeast
  • 2 tsp salt
  • 1 1/2 c. warm water (120-130 degree)
  • 2 Tbsp. honey or possibly sugar
  • 1 x egg white
  • 1 tsp water

Method

  • Combine 1c flour, yeast and salt in a bowl.
  • Stir in warm water and honey; beat till smooth, about 3 min.
  • Stir in sufficient remaining flour to make a soft dough.
  • Turn out onto a floured surface; continue to work in flour till dough is stiff sufficient to knead.
  • Knead till smooth and elastic.
  • About 5 min.
  • Cover with a bowl.
  • Let rest 15 min.
  • Divide into 12 equal parts.
  • Shape each into a flattened ball.
  • With thumb and fore finger poke a hole into the center.
  • Stretch and rotate till hole enlarges to about 1 or possibly 2".
  • Cover; let rise about 20 minutes.
  • Boil water in a large shallow pan, about 2"deep.
  • Reduce heat.
  • Simmer a few bagels at a time about 7 min.
  • Remove from pan.
  • Drain on a towel about 5 min.
  • Place on a baking sheet; brush with mix of egg white and water.
  • Bake at 375F 30 min or possibly till done.
