Ingredients

  • 1 cup Dry Pasta, Cooked According To Package Directions
  • 6 pieces Bacon, Cooked (reserve 1 Tablespoon Bacon Grease To Toss With Cooked Pasta)
  • 1 cup Cooked Chicken, Chopped
  • 1/3 cups Grated Parmesan Cheese
  • 1/4 cups Thinly Sliced Red Onion
  • 1/2 cups Chopped Fresh Parsley
  • 1/2 heads Lettuce (or Whole Head If It's Small)
  • 1 cup Croutons (optional If Not Using Lettuce And Just Making A Pasta Salad)
  • 1 teaspoon Fresh Black Pepper
  • 1/2 teaspoons Salt
  • 1/2 cups Caesar Dressing, Or More To Taste

Method

  • Cook pasta according to package directions. Meanwhile, cook bacon, reserving 1-2 tablespoons of drippings. Prep all other ingredients.
  • Drain pasta and rinse under cold water. Transfer to a bowl and toss with bacon drippings. (Doesn't "drippings" sound so much better than "grease"? But really, this is important to get the best flavour. Don't skip it! If you're making this ahead, it also keeps the pasta from sticking together.)
  • Combine all ingredients in a large bowl and toss to coat thoroughly with the dressing. Serve immediately.
  • If transporting, add lettuce right before serving or skip the lettuce and serve a delicious Caesar pasta salad.
