- 1 1/2 cup flour
- 3/4 cup cornmeal
- 1 tbsp granulated sugar
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup shredded aged cheddar cheese
- 6 slice bacon,cooked & crumbled
- 1 green onion chopped fine
- 3 eggs
- 2 1/4 cup buttermilk
- 1/4 cup unsalted butter,melted
- 2 tbsp veg . oil
Method
- In large bowl whisk flour, cornmeal, sugar, baking powder, baking soda&salt.
- Stir in cheese,bacon & green onion.
- In separate bowl whisk together eggs, butter milk & butter; pour over flower mixture and stir just until combined.
- Let stand for 10 minutes
- Lightly oil nonstick skillet, over medium heat poor around a quarter of a cup of batter for each pancake, brushing skillet with remaining oil as necessary, cook until underside is golden and bubbles break on top but do not fill in, about 2 minutes turn and cook until underside is golden 30 to 60 seconds.
- Of course you want to use maple syrup.
