Ingredients

  • 3 lb. summer squash
  • 2 eggs
  • 1/2 c. chopped onions
  • 1 stick margarine
  • 1/2 c. cracker meal or bread crumbs
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Method

  • Wash and cut up squash. Boil until tender. Drain thoroughly. Then mash. Add all ingredients, except 1/2 of the margarine. Melt remaining margarine. Pour mixture in baking dish, then spread melted margarine over top and sprinkle with cracker meal or bread crumbs. Bake in 375° oven approximately 1 hour or until brown on top and set.
