Ingredients

  • 2 (15 ounce) cans black beans, drained
  • 1 (15 ounce) can corn, drained
  • 2 roma tomatoes, diced
  • 14 cup diced red bell pepper
  • 14 cup diced red onion
  • 14 cup diced celery
  • 14 cup diced pineapple
  • 1 tablespoon chopped cilantro
  • 1 jalapeno pepper, seeded & minced
  • 4 tablespoons sherry vinegar (Aunt Becky used red wine vinegar)
  • 12 lime, juice of
  • 3 tablespoons honey
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 pinch ground cumin

Method

  • Mix all ingredients in a bowl and refrigerate for 1 hour before serving.
