Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 3/4 c. milk
  • 1 tsp. grated onion
  • salt and pepper
  • 1 1/2 c. grated American cheese
  • 3 eggs, separated
  • 1 1/2 c. canned asparagus

Method

  • Make a sauce with butter, flour and milk.
  • When thickened and smooth, remove from fire.
  • Add chopped onion and cheese and stir until cheese is melted.
  • Add beaten egg yolks and blend well. Carefully add the asparagus, cut in small pieces.
  • Season to taste. Fold in beaten egg whites.
  • Pour into a buttered casserole dish and bake in moderate oven (350°) for about 30 minutes or until center is slightly firm.
  • Serves 6.
