Ingredients
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3/4 c. milk
- 1 tsp. grated onion
- salt and pepper
- 1 1/2 c. grated American cheese
- 3 eggs, separated
- 1 1/2 c. canned asparagus
Method
- Make a sauce with butter, flour and milk.
- When thickened and smooth, remove from fire.
- Add chopped onion and cheese and stir until cheese is melted.
- Add beaten egg yolks and blend well. Carefully add the asparagus, cut in small pieces.
- Season to taste. Fold in beaten egg whites.
- Pour into a buttered casserole dish and bake in moderate oven (350°) for about 30 minutes or until center is slightly firm.
- Serves 6.
