Ingredients

  • 8 ounces cooked chicken, chopped
  • 1/2 cup carrots, shredded
  • 1/4 cup onion, thinly sliced
  • 24 seedless grapes, cut into halves
  • 6 tablespoons pecans, toasted
  • For Dressing:
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 t curry powder or more to taste
  • 3 T mango chutney
  • 1/4 cup scallions, finely minced
  • 1 t salt
  • 1/2 t black pepper
  • 1 head Boston lettuce, cleaned and chopped

Method

  • Mix dressing ingredients in a bowl.
  • Toss chicken, carrots, onion, grapes, pecans and chopped lettuce in a salad bowl. Add dressing and mix together.
