Ingredients
- 8 ounces cooked chicken, chopped
- 1/2 cup carrots, shredded
- 1/4 cup onion, thinly sliced
- 24 seedless grapes, cut into halves
- 6 tablespoons pecans, toasted
- For Dressing:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 t curry powder or more to taste
- 3 T mango chutney
- 1/4 cup scallions, finely minced
- 1 t salt
- 1/2 t black pepper
- 1 head Boston lettuce, cleaned and chopped
Method
- Mix dressing ingredients in a bowl.
- Toss chicken, carrots, onion, grapes, pecans and chopped lettuce in a salad bowl. Add dressing and mix together.
