Ingredients

  • 1/4 Cup plus 2 tablespoons smooth peanut butter
  • 3 Tbsp. fresh lime juice
  • 3 tbsp. Asian fish sauce
  • 3 tbsp water
  • 3 tbsp. sugar
  • 3 garlic cloves minced
  • 2 tbsp. Sriracha chile sauce
  • 2 lbs. Napa cabbage (bagged cole slaw is even better) thinly slices (12) cups
  • 3/4 pound red cabbage (thinly sliced) 3 cups
  • 3 medium carrots, julienned
  • 2 red peppers, thinly sliced
  • 3 tablespoons chopped cilantro
  • 15 mint leaves
  • Salt & fresh ground pepper

Method

  • 1. In a medium bowl, whisk the peanut butter with the lime juice, fish sauce, water, sugar, garlic & Sriracha.
  • 2. In a large bowl, toss the napa cabbage (cole slaw) & red cabbage with the carrots, peppers, cilantro & mint. Toss the coleslaw with the dressing & season with salt & pepper.
  • Serve immediately
