Ingredients

  • 1- 1/4 pound Boneless Skinless Chicken Breasts, Cut Into 1/2-inch Cubes
  • 2 cups Low-sodium Chicken Stock, Store Bought Or Homemade
  • 11 ounces, weight Canned Whole Kernel Yellow Corn, Drained
  • 30 ounces, weight Canned Cannellini Beans, Drained
  • 1 Small Yellow Onion, Chopped
  • 1/2 cups Canned, Diced Green Chilies
  • 14- 1/2 ounces, weight Canned Diced Tomatoes, Drained
  • 1 package (1 Oz. Size) Chili Seasoning (McCormick Makes A Good One!)
  • 1/2 teaspoons Garlic Powder
  • Sour Cream, Tortilla Chips, Chopped Chives, Shredded Cheddar Cheese For Topping If Desired

Method

  • Place all of the ingredients (except toppings) in a large crockpot.
  • Put the lid on and cook over low heat for 8 hours, stirring often.
  • Serve with desired toppings.
