Ingredients

  • 2 handfuls baby arugula
  • 1/2 pomegranate
  • 1 avocado sliced
  • 3 tablespoons cilantro or parsley, chopped
  • 1/4 cup goat cheese crumbled-optional
  • freshly ground black pepper
  • sea salt
  • 2 tablespoons olive oil
  • 1/2 tablespoon fresh lemon juice or balsamic vinegar or to taste
  • 1 teaspoon pomegranate molasses

Method

  • Toss the salad ingredients in a medium bowl.
  • In a smaller bowl, mix the dressing ingredients and pour over the salad.
  • Sprinkle with course salt and freshly ground black pepper.
