Ingredients

  • 1 12 cups fresh pineapple, peeled and chopped
  • 1 12 cups ripe cantaloupe, seeded, peeled, chopped
  • 1 12 cups ripe papayas, seeded, peeled, chopped
  • 34 cup unsweetened apricot nectar
  • 1 12 cups unsweetened pineapple juice
  • 34 cup sparkling water
  • fresh lime juice, to taste (optional)
  • fresh mint leaves, to garnish (optional)

Method

  • In blender or food processor, puree pineapple, cantaloupe and papaya until smooth.
  • With motor running, add apricot nectar, 1 cup pineapple juice and water.
  • Transfer to pitcher.
  • Season with lime juice, if desired.
  • Add remaining pineapple juice to desired consistency or you can add more sparkling water if desired.
  • Pour into glasses filled about halfway up with crushed ice.
  • Garnish with fresh mint leaves if you like.
