Ingredients

  • 1 c. white rice
  • 2 x liters (approx 1/2 gallon) of Lowfat milk
  • 1 x cinnamon stick
  • 3/4 c. sugar
  • 1 sm rind of green lime.

Method

  • Cook the rice using only half of the lowfat milk, with the green lime rind.
  • Be patient and cook it at medium-low, till the rice is very soft.
  • Try not too move it too much, but do stir a little, occasionally.
  • If it was necessary, you may add in some cool lowfat milk, if the rice has absorbed all the liquid.
  • Once the rice is cooked, add in the rest of the lowfat milk, the cinnamon stick, and the sugar.
  • Stir to make sure everything's mixed.
  • Continue with medium-low heat, till you see it gets a thick texture.
  • After which, turn off the heat and leave it alone till it cools down.

  • "Arroz con leche" (Rice with lowfat milk, literally) is a very popular dessert in Mexico, and I believe it is also in most of Latin America and there is also a similar thing in India.
