Ingredients

  • 2 pkg. apricot jello
  • 2 c. hot water
  • 2 c. cold water
  • 3 bananas, sliced
  • 1 c. miniature marshmallows
  • 1 large can crushed pineapple, drained (save juice)
  • 1 egg
  • 1/2 c. sugar
  • 1/2 c. soft cream cheese
  • Cool Whip

Method

  • In a small saucepan, mix 1 egg (slightly beaten), sugar and 1/2 cup pineapple juice.
  • Cook until thickens.
  • Add 1/2 cup soft cream cheese.
  • Set aside to cool.
  • In a separate bowl, mix apricot jello with water.
  • Add pineapple, bananas and marshmallows.
  • Add mixture in saucepan to gelatin.
  • Let congeal.
  • Add Cool Whip to top.
