Ingredients

  • 3/4 c. butter or oleo
  • 1 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 1 1/3 c. coconut
  • 1/2 c. chopped nuts (if desired)
  • 1 (12 oz.) jar apricot preserves

Method

  • Cream butter and sugar.
  • Add egg and vanilla.
  • Combine flour and baking powder and add to creamed mixture.
  • Add coconut and nuts.
  • Mix well.
  • Press 2/3 mixture into greased 9 x 13-inch pan. Spread with preserves.
  • Crumble remaining dough over top.
  • If mixture isn't crumbly enough, I add some more sugar and flour Bake at 350° for 30 to 35 minutes until golden brown.
  • Cool and cut.
