Ingredients
- 3/4 c. butter or oleo
- 1 c. sugar
- 1 egg
- 1/2 tsp. vanilla
- 2 c. flour
- 1/4 tsp. baking powder
- 1 1/3 c. coconut
- 1/2 c. chopped nuts (if desired)
- 1 (12 oz.) jar apricot preserves
Method
- Cream butter and sugar.
- Add egg and vanilla.
- Combine flour and baking powder and add to creamed mixture.
- Add coconut and nuts.
- Mix well.
- Press 2/3 mixture into greased 9 x 13-inch pan. Spread with preserves.
- Crumble remaining dough over top.
- If mixture isn't crumbly enough, I add some more sugar and flour Bake at 350° for 30 to 35 minutes until golden brown.
- Cool and cut.
