Ingredients

  • 1 c. margarine (don't use butter)
  • 1 c. sugar
  • 2 c. flour
  • 1 1/2 c. coconut
  • 1/2 c. chopped pecans
  • 1 (18 oz.) jar Smuckers apricot preserves

Method

  • Cream margarine.
  • Add sugar and flour; stir in coconut and nuts.
  • Press 3/4 of the mixture into a 15 x 10-inch ungreased pan and bake for 15 minutes at 350°.
  • After 15 minutes, remove from oven and spread 18 ounces of apricot preserves over crust. Crumble remaining mixture over the preserves and bake for an additional 20 to 30 minutes.
  • I usually have to keep it in for 30 minutes.
  • These are super the next day.
