Ingredients
- 1 c. margarine (don't use butter)
- 1 c. sugar
- 2 c. flour
- 1 1/2 c. coconut
- 1/2 c. chopped pecans
- 1 (18 oz.) jar Smuckers apricot preserves
Method
- Cream margarine.
- Add sugar and flour; stir in coconut and nuts.
- Press 3/4 of the mixture into a 15 x 10-inch ungreased pan and bake for 15 minutes at 350°.
- After 15 minutes, remove from oven and spread 18 ounces of apricot preserves over crust. Crumble remaining mixture over the preserves and bake for an additional 20 to 30 minutes.
- I usually have to keep it in for 30 minutes.
- These are super the next day.
