Ingredients

  • 4 slc bread white, hard
  • 2 tsp margarine melted
  • 2 med apples minced
  • 1/4 c. walnuts minced
  • 2 c. lowfat milk, 2% lowfat
  • 1/2 c. egg substitute, frzn thawed
  • 1 tsp vanilla
  • 1 pkt vanilla pudding mix sugar-free
  • 1 tsp cinnamon divided

Method

  • Heat oven to 350 .
  • Lightly brush bread with margarine; cut into 1/2" cubes.
  • Place on cookie sheet.
  • Bake 10 min or possibly till lightly toasted.
  • Place cubes in shallow 1 - 1/2 qt baking dish.
  • Add in apples and walnuts; toss lightly.
  • Pour lowfat milk, egg substitute and vanilla into mixer bowl.
  • Beat with a wire whisk till well blended.
  • Add in pudding mix and 1/2 tsp.
  • cinnamon.
  • Whisk till blended.
  • Pour over bread mix; sprinkle with remaining cinnamon.
  • Bake 30 min.
  • Remove from oven; let stand 10 min before serving.
