Ingredients

  • 1 1/2 c. vegetable or corn oil
  • 3 c. sugar
  • 3 large eggs
  • 1 tsp. vanilla extract
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 3 apples
  • 1 c. chopped walnuts
  • 1 c. raisins

Method

  • Preheat oven to 350°.
  • In large mixing bowl beat oil and sugar together.
  • Add eggs and vanilla, beat until smooth.
  • In a separate bowl, sift together the flour, salt, cinnamon and baking soda. Stir the flour mix into batter.
  • Peel, core and thickly slice apples.
  • Stir apples, walnuts and raisins into batter.
  • Turn into buttered, floured tube pan.
  • Bake 1 hour or until toothpick inserted into the cake comes out clean.
  • Allow cake to cool briefly in pan (10 minutes) as this will make the outside crunchy. Turn cake onto rack and allow to cool completely.
