Ingredients
- 1 1/2 c. vegetable or corn oil
- 3 c. sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 3 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 3 apples
- 1 c. chopped walnuts
- 1 c. raisins
Method
- Preheat oven to 350°.
- In large mixing bowl beat oil and sugar together.
- Add eggs and vanilla, beat until smooth.
- In a separate bowl, sift together the flour, salt, cinnamon and baking soda. Stir the flour mix into batter.
- Peel, core and thickly slice apples.
- Stir apples, walnuts and raisins into batter.
- Turn into buttered, floured tube pan.
- Bake 1 hour or until toothpick inserted into the cake comes out clean.
- Allow cake to cool briefly in pan (10 minutes) as this will make the outside crunchy. Turn cake onto rack and allow to cool completely.
