Ingredients

  • 1 1/2 c. flour
  • 2/3 c. light brown sugar
  • 3/4 tsp. salt
  • 1/4 lb. unsalted butter
  • 1 Tbsp. cornstarch
  • 1 1/2 tsp. grated orange zest
  • 3/4 tsp. ground cinnamon
  • 3 lb. tart baking apples

Method

  • Heat the oven to 375°.
  • Combine flour, 1/3 cup of the sugar and the salt.
  • Cut the butter into small pieces and rub into the flour mixture until crumbly.
  • In a mixing bowl, combine the remaining 1/3 cup sugar, cornstarch, orange zest and cinnamon.
  • Peel the apples, core and cut into chunks.
  • Add to the sugar mixture and toss to coat.
