Ingredients

  • 2 c. flour
  • 1/4 c. plus 2 Tbsp. brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 1/2 c. peeled, shredded Rome apple
  • 3/4 c. plus 2 Tbsp. buttermilk
  • 2 Tbsp. vegetable oil
  • 1 tsp. vanilla extract

Method

  • Combine first 6 ingredients in a large bowl.
  • Make a well in center of mixture.
  • Combine apple and next 3 ingredients and stir well.
  • Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups sprayed with cooking spray.
  • Bake at 400° for 28 minutes or until a wooden pick comes out clean.
  • Remove from pans immediately.
  • Let cool on a wire rack.
