Ingredients

  • 1/4 c. apple juice
  • 2 1/2 Tbsp. apple cider vinegar
  • 2 Tbsp. minced sweet onion or 1 large shallot, minced
  • 2 tsp. Dijon mustard
  • 1 tsp. dried tarragon
  • 3 Tbsp. coarsely chopped fresh parsley
  • generous amount freshly cracked black pepper

Method

  • Place all ingredients in a blender or the work bowl of a food processor fitted with a metal blade.
  • Process on high until dressing is smooth.
  • Cover and refrigerate several hours.
  • Serve with fresh salad greens or fresh fruit.
  • Makes 8 1/2 cups for 1-tablespoon servings.
