Ingredients
- 1/4 c. apple juice
- 2 1/2 Tbsp. apple cider vinegar
- 2 Tbsp. minced sweet onion or 1 large shallot, minced
- 2 tsp. Dijon mustard
- 1 tsp. dried tarragon
- 3 Tbsp. coarsely chopped fresh parsley
- generous amount freshly cracked black pepper
Method
- Place all ingredients in a blender or the work bowl of a food processor fitted with a metal blade.
- Process on high until dressing is smooth.
- Cover and refrigerate several hours.
- Serve with fresh salad greens or fresh fruit.
- Makes 8 1/2 cups for 1-tablespoon servings.
