Ingredients

  • 1/2 c. milk
  • 1 egg
  • 2 Tbsp. margarine
  • 1 orange rind, grated
  • orange juice from 1/2 fresh orange
  • 1/2 c. chopped apple, include peel
  • 1/2 tsp. vanilla
  • 1 1/2 c. cake flour
  • 1/4 tsp. salt
  • 1 Tbsp. baking powder
  • cooking oil sufficient to be 1/2 inch in fryer

Method

  • Combine milk, egg, and margarine.
  • Add orange rind, juice, chopped apple and vanilla.
  • Sift together cake flour, salt and baking powder.
  • Using a spoon, stir dry ingredients into the milk mixture until blended.
  • Drop by the spoonful into 1/2 in hot oil. Fry to a golden brown.
  • Drain.
  • Good with butter, apple butter or by themselves.
