Ingredients
- 4 large green cooking apples, peeled and sliced
- 1 tablespoon soft brown sugar
- 2 tablespoons golden syrup
- 2 tablespoons lemon juice
Topping
- ¾ cup self-raising flour
- ½ cup desiccated coconut
- ½ cup rolled oats
- ½ cup soft brown sugar
- 100 g butter
Method
1. Preheat oven to moderate 180°C. Brush a shallow 6-cup capacity casserole dish with melted butter or oil. Place apples, sugar, golden syrup and lemon juice in a large pan; cover with tight-fitting lid and cook over a low heat for 10 minutes or until apples soften.
2. Spoon apple mixture into dish.
3. In a bowl combine flour, coconut, rolled oats and sugar; mix well. Make a well in the centre. Melt butter and pour into bowl with dry ingredients. Mix to form a crumble.
4. Scatter crumble mixture over apples. Bake for 25–30 minutes or until top is crisp and golden. Serve with whipped cream or ice-cream.
