Ingredients

  • 2 None apples, unpeeled
  • 1 tbsp lemon juice
  • 4 None green onions, thinly sliced
  • 3 cups finely shredded green cabbage
  • 1 None carrot, coarsely grated
  • 1/2 cup coarsely chopped fresh flat-leaf parsley
  • None None FOR THE BUTTERMILK DRESSING
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1 tbsp red wine vinegar

Method

  • Coarsely grate the apples into a large bowl and stir in the lemon juice. Add the remaining ingredients; toss gently to combine.
  • For the buttermilk dressing, whisk all ingredients in a small bowl. Season to taste.
  • Drizzle dressing over coleslaw; toss gently to combine.
