- 2 None apples, unpeeled
- 1 tbsp lemon juice
- 4 None green onions, thinly sliced
- 3 cups finely shredded green cabbage
- 1 None carrot, coarsely grated
- 1/2 cup coarsely chopped fresh flat-leaf parsley
- None None FOR THE BUTTERMILK DRESSING
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 1 tbsp red wine vinegar
Method
- Coarsely grate the apples into a large bowl and stir in the lemon juice. Add the remaining ingredients; toss gently to combine.
- For the buttermilk dressing, whisk all ingredients in a small bowl. Season to taste.
- Drizzle dressing over coleslaw; toss gently to combine.
