- vegetable cooking spray
- 4 medium cooking apples (2 lb.)
- 2 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- salt
- 1/2 c. all-purpose flour
- 4 Tbsp. margarine (1/2 stick)
- lo-cal sweetener to equal 2 Tbsp. sugar
Method
- Preheat oven to 425°.
- Spray bottom of 8 x 8-inch baking dish with vegetable spray.
- Peel, core and thinly slice apples.
- In a large bowl with rubber spatula, toss apples, lemon juice, cornstarch, cinnamon, nutmeg and 1/4 teaspoon of salt.
- Arrange in baking dish.
- In a medium bowl with fork, combine the flour and 1/4 teaspoon of salt.
- With pastry blender, cut in margarine until mixture resembles coarse crumbs.
- Sprinkle mixture over apples. Bake 40 to 45 minutes until crust is golden and apples are tender. Immediately sprinkle lo-cal sweetener over crust.
- Makes 9 servings.
