Ingredients

  • vegetable cooking spray
  • 4 medium cooking apples (2 lb.)
  • 2 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • salt
  • 1/2 c. all-purpose flour
  • 4 Tbsp. margarine (1/2 stick)
  • lo-cal sweetener to equal 2 Tbsp. sugar

Method

  • Preheat oven to 425°.
  • Spray bottom of 8 x 8-inch baking dish with vegetable spray.
  • Peel, core and thinly slice apples.
  • In a large bowl with rubber spatula, toss apples, lemon juice, cornstarch, cinnamon, nutmeg and 1/4 teaspoon of salt.
  • Arrange in baking dish.
  • In a medium bowl with fork, combine the flour and 1/4 teaspoon of salt.
  • With pastry blender, cut in margarine until mixture resembles coarse crumbs.
  • Sprinkle mixture over apples. Bake 40 to 45 minutes until crust is golden and apples are tender. Immediately sprinkle lo-cal sweetener over crust.
  • Makes 9 servings.
