Ingredients

  • 2 c. sifted all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 2 eggs
  • 3/4 c. sugar
  • 1/4 c. vegetable oil
  • 2 c. chopped apples
  • 1/2 c. shredded carrots

Method

  • Sift together flour, baking powder, cinnamon and salt.
  • In a small bowl, beat eggs, sugar and oil.
  • Add dry ingredients along with apples and carrots and mix well.
  • Spoon into paper liners in a muffin pan; fill 2/3 full.
  • Bake in 325° oven for 20 to 25 minutes or until done.
