Ingredients
- 2 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1/4 c. vegetable oil
- 2 c. chopped apples
- 1/2 c. shredded carrots
Method
- Sift together flour, baking powder, cinnamon and salt.
- In a small bowl, beat eggs, sugar and oil.
- Add dry ingredients along with apples and carrots and mix well.
- Spoon into paper liners in a muffin pan; fill 2/3 full.
- Bake in 325° oven for 20 to 25 minutes or until done.
- Makes about 16
- muffins.
