Ingredients

  • 1 cup vegetable oil (canola)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 extra large eggs
  • 2 12 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 tablespoons Kahlua
  • 3 12 cups apples, chopped
  • 12 cup raisins

Method

  • Preheat oven to 325F.
  • Grease and flour a 10" spring form pan.
  • Mix sugars with oil with hand mixer.
  • Add eggs and beat well.
  • Sift flour, baking powder, baking soda, salt and cinnamon in separate bowl and then incorporate into the egg mixture until well blended.
  • Fold in Kaluha, apples and raisins.
  • Pour into pan and bake for 1 1/2 hours or until a toothpick inserted in the center of cake emerges clean.
