Ingredients

  • 1/4 cup butter
  • 1/4 cup brown sugar + 2 tbsp
  • 2 None medium green apples, peeled, cored, halved lengthwise, thinly sliced
  • 1 x 15 oz package vanilla cake mix
  • 1/2 cup dried shredded coconut
  • 1/2 cup vegetable oil
  • 1 None large egg, lightly whisked
  • 6 oz plain Greek yogurt
  • 1/2 tsp ground cinnamon

Method

  • Preheat oven to 425°F. Grease and line base and sides of an 8x12 inch jelly roll pan with parchment paper, extending paper at long sides for handles.
  • Melt butter in a medium saucepan over moderate heat. Add 1/4 cup sugar and apple and cook, stirring, for 8-10 minutes or until apple is soft. Remove pan from heat.
  • Combine cake mix, coconut, oil and egg in a medium bowl. Spread cake mixture over base of prepared pan; level. Bake for 5 minutes (base won't be completely cooked). Spoon apple mixture evenly over base in pan. Bake for 5 minutes more or until golden and cooked. Cool completely in pan.
  • Transfer to a cutting board and cut into 24 pieces. Whisk yogurt, 2 tbsp brown sugar and cinnamon in a small bowl. Serve pieces topped with cinnamon yogurt.
