Ingredients

  • 1 3/4 c. all-purpose flour
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. apple pie spice or pumpkin spice
  • 1/4 tsp. salt
  • 1 beaten egg
  • 3/4 c. milk (buttermilk can be used)
  • 1/4 c. cooking oil
  • 2 Tbsp. sugar
  • 1/3 c. apple butter
  • 1/3 c. chopped pecans

Method

  • In medium mixing bowl, combine flour, 1/3 cup sugar, baking powder, apple pie spice or pumpkin pie spice and salt.
  • Make a well in center.
  • Combine egg, milk and oil; add all at once to flour mix.
  • Stir just until moistened.
  • Line muffin pans with paper.
  • Spoon a round tablespoon of batter into each.
  • Top each with a rounded teaspoon of apple butter and then with the remaining batter.
  • Combine pecans and 2 tablespoons sugar; sprinkle atop batter.
  • Bake at 400° for 20 minutes.
