Ingredients

  • APPLE:
  • 12-14- tart apples for baking
  • for flam bay- apple flavored brandy or any flavor brandy will do
  • 1/3 cup sugar
  • 2 Tbl- cinnamon
  • 1/3 cup- brown sugar
  • wooden skewer or long wooden match
  • CRISP:
  • 1- 1 1/2 cups- Oats
  • 2 Tbl- sugar
  • 2 Tb- brown sugar
  • 4 wz- butter
  • WHIPPED TOPPING:
  • 2 cups- cream
  • sugar to sweeten
  • vanilla extract to taste

Method

  • peel core and slice apples thin
  • combine in a bowl sugar, cinnamon, brown sugar
  • heat a saute pan and place apples in on medium heat
  • sprinkle in half the sugar, cinnamon, brown sugar mix
  • stir the apples around then add brandy and use skewer or match to ignite if it does not flame when brandy is added (caution: use safe procedures during this step)
  • once cooked down add remaining sugar, cinnamon, brown sugar mixture and a bit more brandy and mix atop low heat until the apples are done and the sugar and brandy mixture forms a molasses like sauce
  • remove from heat and lay the cooked apples in the bottom of a buttered pan
  • combine the dry crisp ingredients together
  • sprinkle mixture overtop of the apples then slice the butter into thin pads and lay on top of the crisp mix
  • place into a 350 degree F preheated oven
  • Bake until the crisp turns golden brown app 20 min depending on your oven
  • to make the whipped topping
  • using a wire wisk beat the cream to soft peaks
  • add the vanilla extract just to flavor
  • add sugar to sweeten to your taste
  • combine bringing the mixture to firm peaks
  • be careful not to over whip
  • assemble:
  • after the apple crisp is done let cool slightly.
  • cut the crisp into portions
  • serve with a dollop or two of the whipped topping placed on top of the crisp.
