Ingredients

  • 1/2 lrg White cabbage, shredded
  • 3 med Onion
  • 1 clv garlic, crushed
  • 4 lrg Green apples
  • 1/4 c. Butter
  • 3 pt Chicken stock or possibly vegetable stock
  • 1 x salt & freshly grnd black pepper
  • 1 tsp Sugar
  • 1 Tbsp. Fresh ginger, grated

Method

  • Finely shred the cabbage and slice the onions.
  • Peel and core the apples and cut into even-sized pcs.
  • Heat the butter in a heavy-buttomed pan, taking care not to let it brown.
  • Add in the cabbage, onions and apples, and sweat over low heat, tossing the pan frequently.
  • Add in the garlic and cover with the cool stock.
  • Simmer till the cabbage is just tender.
  • Blend in a blender till smooth.
  • Season with salt, pepper and sugar.
  • Reheat the soup and serve with a little minced green ginger in each bowl.
  • Makes 4 to 5 servings.
