Ingredients

  • 2 cups zucchini shredded and drained on a paper towel
  • 2 1/2 cups flour
  • 1/2 cup whole wheat flour
  • 1 3/4 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 3/4 cup applesauce
  • 1/2 cup egg substitute
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract

Method

  • Preheat oven to 350.
  • Combine flours, sugar, baking soda, baking powder, salt, cinnamon in a large bowl.
  • Combine applesauce, egg, oil and vanilla in another bowl.
  • Mix wet ingredients into dry ingredients. Don't over-mix, or you will have tough bread.
  • Spray two loaf pans with cooking spray and divide batter between pans.
  • Bake for an hour until a toothpick inserted into the center comes out dry.
