- 2 cups zucchini shredded and drained on a paper towel
- 2 1/2 cups flour
- 1/2 cup whole wheat flour
- 1 3/4 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 3/4 cup applesauce
- 1/2 cup egg substitute
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
Method
- Preheat oven to 350.
- Combine flours, sugar, baking soda, baking powder, salt, cinnamon in a large bowl.
- Combine applesauce, egg, oil and vanilla in another bowl.
- Mix wet ingredients into dry ingredients. Don't over-mix, or you will have tough bread.
- Spray two loaf pans with cooking spray and divide batter between pans.
- Bake for an hour until a toothpick inserted into the center comes out dry.
