Ingredients

  • 3 medium potatoes, peeled and diced
  • 3 carrots, peeled and diced
  • salt
  • 6 slices bacon
  • 1 medium onion
  • 2 pieces celery
  • 1/2 green pepper
  • 1 (28 oz.) can chopped tomatoes
  • 2 tins (5 oz.) clams
  • 1 bay leaf
  • 1/4 to 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/2 Tbsp. chopped dried parsley or 1 Tbsp. chopped fresh
  • big dash of garlic salt
  • coarse ground pepper

Method

  • Cover potatoes and carrots with water.
  • Add salt and cook until tender.
  • Dice and simmer bacon, onion, celery and green pepper until all are soft.
  • In soup pot, place remaining ingredients.
  • Add potatoes and carrots and their water to the pot.
  • Add the bacon mixture to the pot.
  • Simmer for a few minutes to mix flavors.
