Ingredients

  • 2 x limes seeded and halved juice of 1 fresh lime
  • 1 c. pureed mango
  • 1/3 c. diced mango
  • 1/2 c. diced pink papaya
  • 1/2 c. cooked and liquid removed black beans
  • 1/2 c. peeled and diced jicama
  • 1/4 c. finely minced cucumber peel
  • 1/4 c. diced red bell pepper
  • 1/4 c. diced yellow bell pepper
  • 1/4 c. diced red onion
  • 1/2 bn fresh cilantro finely minced
  • 1/2 x Scotch bonnet pepper seeded and chopped
  • 1 1/2 tsp extra-virgin extra virgin olive oil salt and freshly grnd black pepper to taste

Method

  • Place limes in a nonreactive saucepan and cover with water.
  • Bring to a boil and reduce heat to a simmer.
  • Cook limes till soft, about 20 min.
  • Cold and dice.
  • Combine with all remaining ingredients.
  • Store in refrigerator.
  • Serve at room temperature.
