Ingredients

  • 2 (3 oz.) pkg. lemon or lime Jell-O
  • 2 c. boiling water
  • 1 (8 oz.) pkg. cream cheese, cut in small pieces
  • 1 (No. 2) can crushed pineapple, drained
  • 1 tsp. sugar
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts (optional)
  • 1/2 c. maraschino cherries (optional)
  • 1 c. 7-Up
  • few drops green food coloring (optional)

Method

  • Dissolve Jell-O in boiling water.
  • Add cream cheese.
  • Beat with electric mixer at low speed until smooth.
  • Stir in pineapple, sugar, vanilla, food coloring and nuts, if desired.
  • Add 7-Up. Chill until set.
  • Stir when partially set to keep nuts from coming to top.
