Ingredients

  • 2 Tbsp. vegetable oil
  • 1 c. coarsely chopped onion
  • 1 tsp. minced garlic
  • 1 (16 oz.) can no salt added or regular tomatoes
  • 1 (6 oz.) can no salt added or regular tomato paste
  • 1/4 c. minced fresh parsley
  • 1 tsp. each dried oregano and basil
  • 1 (16 oz.) pkg. lasagna noodles
  • 1 1/2 c. (1%) fat cottage cheese
  • 1/4 c. grated Parmesan cheese
  • 2 c. shredded part skim Mozzarella cheese

Method

  • Heat oil in a medium size saucepan over moderate heat.
  • Add the onion and garlic.
  • Cook, stirring occasionally, 3 to 5 minutes until onion is translucent.
  • Stir in tomatoes (break up with spoon), tomato paste, parsley, oregano, basil and 2 cups water. Reduce heat to low.
  • Simmer uncovered, about 25 minutes, stirring occasionally, until slightly thickened.
