- 2 Tbsp. vegetable oil
- 1 c. coarsely chopped onion
- 1 tsp. minced garlic
- 1 (16 oz.) can no salt added or regular tomatoes
- 1 (6 oz.) can no salt added or regular tomato paste
- 1/4 c. minced fresh parsley
- 1 tsp. each dried oregano and basil
- 1 (16 oz.) pkg. lasagna noodles
- 1 1/2 c. (1%) fat cottage cheese
- 1/4 c. grated Parmesan cheese
- 2 c. shredded part skim Mozzarella cheese
Method
- Heat oil in a medium size saucepan over moderate heat.
- Add the onion and garlic.
- Cook, stirring occasionally, 3 to 5 minutes until onion is translucent.
- Stir in tomatoes (break up with spoon), tomato paste, parsley, oregano, basil and 2 cups water. Reduce heat to low.
- Simmer uncovered, about 25 minutes, stirring occasionally, until slightly thickened.
