Ingredients

  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1/8 tsp. salt
  • 1 to 1 1/2 c. roasted peanuts
  • 1 Tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Method

  • In Corning Ware dish (1 quart) combine syrup, sugar and salt. Microwave on High for 5 minutes.
  • Stir in peanuts and microwave 3 to 5 minutes, stirring after 2 minutes until syrup and peanuts are lightly brown.
  • Stir in butter, vanilla and soda. Stir until butter melts and mixture is foamy.
  • Pour out onto buttered cookie sheet (about 1/4-inch thick).
  • Let cool.
  • Break into bite size pieces.
  • Makes 1 pound.
