Ingredients

  • 2 medium zucchini
  • 1/2 onion, chopped
  • 1 Tbsp. margarine
  • 3/4 c. cottage cheese, drained
  • 3/4 c. cooked rice
  • 1 egg, beaten
  • 1 tsp. salt
  • 1/4 tsp. chervil
  • 1/4 tsp. thyme
  • sharp Cheddar cheese, shredded

Method

  • Saute onion in margarine.
  • Cook zucchini in boiling water 5 minutes.
  • Cut lengthwise.
  • Scoop out centers and dice.
  • Add to the diced zucchini the other ingredients, all except the cheese. Lightly salt the zucchini shells.
  • Fill shells with zucchini mixture.
  • Place in greased baking dish.
  • Cover with foil.
  • Bake at 350° about 25 minutes.
  • Remove from oven.
  • Uncover.
  • Sprinkle with cheese.
  • Return to oven for 5 to 10 minutes, until cheese melts.
