Ingredients
- 2 medium zucchini
- 1/2 onion, chopped
- 1 Tbsp. margarine
- 3/4 c. cottage cheese, drained
- 3/4 c. cooked rice
- 1 egg, beaten
- 1 tsp. salt
- 1/4 tsp. chervil
- 1/4 tsp. thyme
- sharp Cheddar cheese, shredded
Method
- Saute onion in margarine.
- Cook zucchini in boiling water 5 minutes.
- Cut lengthwise.
- Scoop out centers and dice.
- Add to the diced zucchini the other ingredients, all except the cheese. Lightly salt the zucchini shells.
- Fill shells with zucchini mixture.
- Place in greased baking dish.
- Cover with foil.
- Bake at 350° about 25 minutes.
- Remove from oven.
- Uncover.
- Sprinkle with cheese.
- Return to oven for 5 to 10 minutes, until cheese melts.
