Ingredients

  • 1 c. shredded zucchini
  • 1 c. Bisquick
  • 1/2 c. chopped onion
  • 1/2 c. Parmesan cheese
  • 2 Tbsp. parsley
  • 1/2 c. vegetable oil
  • 1 tsp. oregano
  • 4 eggs, slightly beaten

Method

  • In mixing bowl, combine eggs, oil, onion, parsley and oregano. To this mixture, add Bisquick and combine thoroughly.
  • Add shredded zucchini and mix thoroughly.
  • Pour into baking pan.
  • The size of the pan determines the thickness of the torta.
  • The larger the pan, the thinner.
  • Bake at 350°
  • for 25 minutes or until it is done.
