Ingredients
- 1 c. shredded zucchini
- 1 c. Bisquick
- 1/2 c. chopped onion
- 1/2 c. Parmesan cheese
- 2 Tbsp. parsley
- 1/2 c. vegetable oil
- 1 tsp. oregano
- 4 eggs, slightly beaten
Method
- In mixing bowl, combine eggs, oil, onion, parsley and oregano. To this mixture, add Bisquick and combine thoroughly.
- Add shredded zucchini and mix thoroughly.
- Pour into baking pan.
- The size of the pan determines the thickness of the torta.
- The larger the pan, the thinner.
- Bake at 350°
- for 25 minutes or until it is done.
