Ingredients
- 4 c. sliced zucchini
- 1 1/2 qt. chicken broth
- 1/2 c. onions
- 1 c. cream
- 2 Tbsp. butter
- 1 tsp. fresh basil or more to taste
Method
- Saute onions in butter.
- Add zucchini with basil and stock. Simmer for 30 minutes.
- Remove from heat.
- Blend in blender until smooth.
- Add cream and season to taste.
- Serve hot or cold.
