Ingredients

  • 10 c. ground zucchini
  • 4 c. ground onions
  • 2 green peppers
  • 1 red pepper
  • 1 hot pepper
  • 5 Tbsp. salt
  • 2 1/2 c. vinegar
  • 4 c. sugar
  • 1 Tbsp. dry mustard
  • 1 Tbsp. turmeric
  • 1 Tbsp. cornstarch
  • 1 tsp. celery seed
  • 1/2 tsp. pepper

Method

  • Grind together zucchini, onions and all peppers. Sprinkle 5 tablespoons salt on top. Cover and let set overnight.
  • Rinse 2 times in cold water.
  • Take the vinegar, sugar, dry mustard, turmeric, cornstarch, celery seed and pepper and bring to a boil. Dump zucchini in.
  • Simmer 20 minutes.
  • Pack in jars and seal. Makes 7 pints.
