- 10 c. ground zucchini
- 4 c. ground onions
- 2 green peppers
- 1 red pepper
- 1 hot pepper
- 5 Tbsp. salt
- 2 1/2 c. vinegar
- 4 c. sugar
- 1 Tbsp. dry mustard
- 1 Tbsp. turmeric
- 1 Tbsp. cornstarch
- 1 tsp. celery seed
- 1/2 tsp. pepper
Method
- Grind together zucchini, onions and all peppers. Sprinkle 5 tablespoons salt on top. Cover and let set overnight.
- Rinse 2 times in cold water.
- Take the vinegar, sugar, dry mustard, turmeric, cornstarch, celery seed and pepper and bring to a boil. Dump zucchini in.
- Simmer 20 minutes.
- Pack in jars and seal. Makes 7 pints.
