Ingredients

  • 1 lb. zucchini
  • 1/4 c. chopped onions
  • 6 eggs
  • 1 c. milk
  • 1/4 c. Bisquick
  • 1/2 tsp. ground oregano
  • 1/2 tsp. dry basil
  • 1/2 tsp. garlic powder
  • 1 tsp. Parmesan cheese
  • 1 c. cheese, grated

Method

  • Cut zucchini into quarters.
  • Cook with onions until just tender.
  • Drain well and then place in baking dish or pie plate. In blender, pour remaining ingredients.
  • Pour this mixture over zucchini and onions.
  • Bake at 350° for 40 to 50 minutes.
  • Test for being done by inserting knife into center.
  • If it comes out clean, it is done.
  • May sprinkle grated cheese over top before serving.
